“TODOROFF” Wine-cellar concentrates its efforts in production and offering of high quality red wines in boutique series. The cellar is situated in one of the symbolic for the Bulgarian wine production villages - Brestovitza, in the heart of Thracian Region. This region is well known with its exclusively favourable climate and soils for red wine production. The village of Brestovitza is 130 km from Sofia city, and 15 km from the city of Plovdiv.


“Todoroff” wine cellar is the first of this kind in Bulgaria, having a boutique character, offering unique wines as well as a special attitude to the product and the client. The wine is not offered just as a product, but as a subject combining history and art, earmarked for wine-collectors and wine connoisseurs. The marketing strategy is also unique because the cellar aims at special market segment. The wines are presented only in promotions, attended by the limited number of connoisseurs. Even our stands at exhibitions are a reduction of a gallery, presenting the wines as a exhibits laid in art-works, such as wood-carvings and wood sculptures.

“Todoroff” wine cellar established on Bulgarian market a new product with guaranteed quality and accepts the challenge to keep the high level for the future and in the same time to preserve the unique character of the wines. The aim is the tendency in the production of small batches to be followed, and these batches to be valued by wine-collectors and wine connoisseurs.


History and present

The cellar is with interesting history. The Wine cellar was built 1945 and in 1947 the cellar was nationalized by the Government. As a result of the restitution it was returned to inherits. Mr. Ivan Todoroff bought the cellar in 2001 from the owners.

Within a few months a project for applying for financial aid from the special European Union program SAPARD for agricultural development in Bulgaria was prepared. This was the first cellar in Bulgaria approved for financing from the EU program SAPARD.The project was fulfilled only for the period of 6 months. During these 6 month the cellar was totally reconstructed, new construction works were made and new equipment for wine production was purchased. In autumn 2001 the first vintage of wine was produced. The cellar is a bearer of the traditions, and in the same time is equipped with the latest technologies. Its capacity is around 120 tones of wine.

The products

The style, the fines and the constancy in the quality of “TODOROFF” wines are based on the strict control of the selection of small, unique for their content and quality batches of grapes. The high technological opportunities of processing allow us to control and optimize all the processes of vinification.

The preliminarily appointed sorts of wine are a product of a previous biological analysis of the grape stuff and after the grape is considered to have reached the quality standards required by us, it is manually picked with great care and put into cages, thus preserving its entity and good quality during the whole process of production.In order to satisfy the individual requirements of its clients, “TODOROFF” wine cellar works over few styles of wines.

TODOROFF “BOUTIQUE” BATCH

TODOROFF “BOUTIQUE” selection wines are young, red wines of the “Mavrud’, “Cabernet Sauvignon” and “Merlot” sorts, age 4 to 12 months.

Wines are significant for their intensive, rich and sparkling red color and strong developed rich aroma, in which the fragrance of well ripe grapes with the fruity nuances typical for the region and the varieties are sensed.

The taste of wines is dense but mild, well balanced and filling the mouth homogeneously. The after taste is lasting and impressive, and gives the sensation of freshness and purity of the grape stuff, as well as the fines, achieved within the process of a precisely controlled fermentation.
